It is always a little sad to close up the vegetable garden for the winter. That’s why it is particularly nice to discover one plant that is not defeated by the frost, but stand as vigorously and green as ever. It is no secret that kale is one of nature’s super foods, and getting it into your diet is worth the effort.
|2 slices of bacon, chopped and fried|
|80 g mix of chopped hazelnuts, sunflower seeds, sesame seeds|
|1 tsp maple syrup or honey|
|100 g apples, diced|
|50 g feta cheese, diced|
|50 g parmesan cheese, grated|
|400 g kale, chopped|
|9 tbsp olive oil|
|3 tbsp cider vinegar|
|salt and pepper|
Add the nuts and seeds to the olive oil and let it simmer until the seeds and nuts have a golden color. Toss the kale in the oil mixture and add the cider vinegar, season with salt and pepper and top with the bacon, apple, cheese and maple syrup mixture. Serve alongside meat or fish dishes.
